Grand Solmar Land's End Resort & Spa in Cabo San Lucas

A week ago, I was soaking up the sun and the local culture in Los Cabos on my press trip with the Los Cabos Convention & Visitors Bureau. Today, I'm recovering from my move from New York to the Lehigh Valley to live with my fiance. Isn't it amazing how much can happen over the span of just one week?

So, with Maroon 5 cranked and a cup of coffee by my side (yes, I took the day off from work), I bring you this week's Feed Me Friday post!

The Not-Fried Bloomin' Onion

I've mentioned before that I'm a fan of Pinterest. I love sharing what inspires me and seeing what inspires others. That's exactly how I came across this recipe for Bloomin' Onion Rolls from Seasaltwithfood.

I've been known to devour a Bloomin' Onion appetizer or two in my lifetime. But these rolls are such a smarter way to get that same flavor without having to batter and deep-fry anything. Plus, there's cheese involved. I heart cheese.

Better Than a Brownie Sundae

I want a show of hands.

How many of you used to run into the house screaming that you needed money as soon as you heard the music of the ice cream truck as it drove around the neighborhood?

That's what I thought.

Getting ice cream from the ice cream truck during the hot summer months was one of my favorite things as a child. I'd stand there, frozen (haha) with indecision because I couldn't decide between the snow cone or the Choco Taco or the ice cream sandwich. Seeing these Ice Cream Sandwiches made with Brownie Crisps on Elle's New England Kitchen immediately brought me back to the days when I wore pigtails in my hair and didn't have a care in the world. I must make these treats this summer.

Not Myself Until I've Had My Coffee

I've added coffee to the batter of a variety of baked goods but never once thought to add instant coffee granules to pancake batter. It didn't occur to me that doing so made perfect sense until I saw a recipe for Coffee Pancakes on A Cozy Kitchen.

No matter what I'm having for breakfast (or brunch), I must, must, must have a cup of coffee to go with it. Putting coffee in my pancakes might be the best way to get me requesting pancakes more often. I wonder... if I bat my eyelashes enough, will Stephen make these Coffee Pancakes for me at home?

Only one way to find out...

Cake and Ice Cream

Am I the only one who's heard rumblings that pie is the new cupcake? I don't know how I feel about this. I love cupcakes so much that I don't want to believe the rumors.

If you're not ready to let go of the cupcake trend, are still baking them at home, and are willing accepting offers of treats from Magnolia Bakery from coworkers, then I have something fabulous to share with you. Head over to My Kitchen Addiction and check out Jen's recipe for Red Velvet Cake Ice Cream.

You heard me. Red Velvet Cake Ice Cream. I dare you to tell me that something better than that exists in this world.

To close, here's a little bit of information for lovers of German Riesling. Throughout the month of July 2011, restaurants across New York City, and in other area of the US, will be promoting Germany's most famous wine varietal by celebrating "The 31 Days of German Riesling". Restaurants will be offering by-the-glass specials, flights, and food-and-wine pairings, and retailers will be offering in-store tastings. For more information, including a list of participating locations, visit the official website.

Have a Happy Fourth of July weekend, everyone! Stay safe!
