Sharing our Menu Plan for May 4 - May 10, 2014

The Freedom Trail - Boston, MA | Taste As You Go
The Freedom Trail - Boston, MA

Do you have a favorite city? A place to go that has the power to transform your mood and your outlook on life?

I can say that I'm fortunate enough to have a place like that. I do have a favorite city, a destination to visit every spring, a place that just changes my whole attitude. This vibe in this city helps me let go of whatever may be bothering me before my arrival and helps me Just Be.

As I write this blog post, Stephen and I are on the train, heading home after spending another amazing weekend in Boston. Aside from our annual Red Sox game at Fenway Park, we had no agenda and enjoyed having the freedom to wander around the city without needing to rush from Point A to Point B.

We even limited ourselves in terms of checking work email. Given how connected Stephen and I are in our normal day-to-day lives, our mutual decision to keep work separate from our long weekend (for the most part) speaks volumes in terms of the power that Boston holds over us.

While I can't speak for Stephen, I know that I'm grateful for the chance to concentrate on living rather than working, especially since my schedule is about to get more hectic as we approach the end of May. I'm rejuvenated after our weekend in Boston and can't wait to jump back into my various projects for the day job, my freelance clients, and for the blog with a renewed sense of purpose.

To prove it, I'm wasting no time in getting back to a regular blogging schedule, starting with this week's Menu Plan.

Menu Plan: May 4 - May 10, 2014

Sunday: Road Trip Dinner

Since Stephen and I are traveling for most of the day, I didn't plan to cook a formal dinner. Once we pick up my car from my father's house in Connecticut, it'll be interesting to see how long it takes us to go through the drive-thru.

Monday: Stephen's Choice

Stephen will be on a business trip later in the week, so he won't be able to make dinner on his usual night. He gracefully accepted dinner responsibility at the beginning of our work week.

Tuesday: Pulled Chicken Sandwiches with Bourbon-Spiked Barbecue Sauce

I have chicken breast and a batch of my Bourbon-Spiked Barbecue Sauce in the freezer right now, so it made sense to use both for dinner this week. Once I thaw the chicken, I'll put it in the slow cooker with the sauce and let it do its thing for a few hours. I'm already looking forward to enjoying these sandwiches for dinner in a few days.

Wednesday: Lasagna-Stuffed Portobello Mushrooms from Willow Bird Baking

I'll be preparing this recipe just for myself on Wednesday night, but I'm hoping to take advantage of leftovers later in the week to make things a little easier by the time the weekend rolls around.

Thursday: Hot Sausage and Tomatoes over Fried Polenta from Willow Bird Baking

Yes, I'm going to try two recipes from Julie's fabulous blog this week. And I'm not ashamed to admit it.

Friday: Pizza with Broccoli, Mushrooms, and Ricotta

Saturday: Leftovers / Take-Out

I'm hoping Stephen and I will have enough food in the refrigerator by Saturday evening to make our dinner preparation a simple affair. If not, then we'll be getting take-out. I mean, we haven't had Chinese food in a while...

So, guys, I'd love to hear what you're planning on making for dinner this week. Are you trying anything new? Let me know in the comments!
