Sharing our Menu Plan for May 17 - May 23, 2015
I mentioned last week that my schedule was going to be packed and that I wouldn't have much time for cooking. Among the things that kept me out of the kitchen was a trip to Connecticut. Ordinarily, a trip out of town would have been no big deal, but this was the first time that Caroline and I traveled by ourselves. The trip up went well, despite heavy traffic once we crossed into Connecticut, but the trip back required a handful of stops to nurse the baby and change some diapers.
Needless to say, I'm exhausted. Recovering from the trip and dealing with a fussy baby this afternoon has contributed to the late delivery of this week's menu plan. If you're curious to see what's on deck for dinner for us this week, then keep reading!
Menu Plan: May 17 - May 23, 2015
I've barely had time to unpack from our trip let alone get to the grocery store, so it's take-out for us tonight. I am not ashamed.
Monday: Risotto Primavera from Cooking Light

Tuesday: Spaghetti with Marinara Sauce and Basic Baked Meatballs
Wednesday: Pan-Seared Scallops, Crispy Thai Brussels Sprouts from Healthy Aperture, and Rice Pilaf
Thursday: Caprese Salad with Toasted Baguette Slices
Friday: Pizza with Mushrooms and Broccoli
Saturday: Bacon and Caramelized Onion Quiche from Mountain Mama Cooks
