A Month of Dinners: Menu Plan for July

In an attempt to make my life a little easier, I'm planning all of our dinners for July at once.

Let me kick off by saying this -- you guys are the best. I can't even begin to tell you how loved and supported you've made me feel ever since I made my big announcement. It sounds as if you're excited as I am to see how this next chapter is going to inspire the blog.

And, as of yesterday, I'm one step closer to the official beginning of that adventure. We've registered Caroline for daycare and I've set the start date at my new job.

But... If there were ever an appropriate time for me to use the phrase "all the feels," then this is it. Having me go back to work is the right thing for our family right now, and I'm thrilled about this opportunity. But part of me can't help feel sad knowing that my time at home with Caroline is coming to an end.

It's going to take a while for us to get used to our new normal. And while we're adjusting, this month's menu plan is either going to save us or it's going to go largely ignored.

Only time will tell.

MENU PLAN FOR JULY

Week 1: July 1 - July 2

Friday: Pizza with Spinach and Caramelized Onions
Saturday: Leftovers

Week 2: July 3 - July 9


Sunday-Saturday: VACATION

Week 3: July 10 - July 16


Sunday: Take-Out (because who wants to cook the day after getting back from vacation?!?)
Monday: Seared Scallops with Rice Pilaf and Wilted Spinach
Tuesday: Tex-Mex Salad with Stu's Super Citrus Vinaigrette (from The Quick Six Fix)
Wednesday: Caprese Salad with Avocado and Toasted Baguette Slices
Thursday: Tagliatelle with Mushy Peas, Pork Sausages, and Ricotta (from The Quick Six Fix)
Friday: Pizza with Broccoli and Caramelized Onions
Saturday: Potluck Pool Party & BBQ / Leftovers

Week 4: July 17 - July 23


SundaySlow Cooker Chicken Burrito Bowls (from Foxes Love Lemons)
MondayCreamy Parmesan Risotto with Roasted Shrimp and Peas
Tuesday: Leftovers
Wednesday: Stephen's Choice

Week 5: July 24 - July 30

Monday: Cheese Quesadillas with Black Bean Avocado Salad (from Lose Weight by Eating)
Tuesday: Leftovers
Wednesday: Stephen's Choice
ThursdaySpicy Chicken Milanese with Tomato Salad and Parmesan
