Since finding out that I was pregnant, I think this past week has been the busiest and most productive one yet. Not only did Stephen and I have painters in to paint all of the rooms on the third floor of our townhouse, but I also managed to stick to my aggressive blogging schedule and work on freelance projects that were due. Add two nights out with friends -- one in New York and one in Philadelphia -- and you'd think I'd be absolutely exhausted today.

Nope! We found ourselves out of bed early (for a Sunday, anyway), out to breakfast early, and out running errands like a good little suburbanite couple with a baby on the way. I don't know how long this burst of energy will last, but I'm going to enjoy every last second of it!

Menu Plan: December 7 - December 13, 2014

Sunday: Broccoli Cheddar Brown Rice Casserole from Oh My Veggies

Since we attended our friends' holiday party in Philadelphia last night, I didn't need to make this casserole that I planned for dinner. I simply bumped the casserole to tonight. That's the beauty of menu planning. It's great having an idea of what to make for each meal, but it's not set in stone. During t-*his time of year, flexibility is key!

Monday: Leftovers

It's highly likely that we'll have leftover casserole, so why not make those leftovers work for us?

Tuesday: Monterrey Chicken Skillet from Budget Bytes

Wednesday: Stephen's Choice

Thursday: Dinner Out

Stephen and I have our first newborn care class on Thursday night (!), so I'm not planning on cooking anything from scratch. We'll use the opportunity to grab dinner out.

Friday: Pizza with Spinach and Ricotta

Saturday: Taco Night with Homemade Taco Seasoning

Taco Night also didn't happen last week because I just wasn't feeling up to going through the motions. (Plus, we had plenty of leftovers to tide us over.) Let's see if I actually get around to making tacos this week.
