Sharing our Menu Plan for January 12 - January 18, 2014


Ever since I started building my freelance writing career, I've wanted to clear something up. While it sounds like a glamorous life to live -- working "for myself" and cherry-picking assignments from a pool of loyal clients -- it's hard work. What you don't see are the hours I put into prospecting and pitching potential new clients. What you don't see are the late nights I spend working on the projects I have secured, researching and writing and editing and rewriting (because I'm a perfectionist who likes to get it right the first time). What you don't see is the magnificent juggling act I perform as I attempt to balance everything I have going on.

Seriously, guys, it's harder than it looks. Which means the rewards -- the client approval, the promise of more projects, the opportunities that open up because of the work I've already put in -- are that much sweeter.



It's times like these that I'm extremely grateful for our weekly Menu Plans. I don't have to eat up valuable time each night debating with Stephen about what we're going to have for dinner. I just look at the plan, get to work in the kitchen, and that's that.

If you find yourself in a similar situation, trying to make the most of every spare second you can find, then I highly recommend planning your meals each week if you don't already. The benefits are endless!

Menu Plan: January 12 - January 18, 2014

Sunday: Parmesan-Breaded Turkey Cutlets with Arugula

Monday: Spaghetti with Olive Oil, Garlic, and Roasted Garlic

Yes, I realize that this dish appeared on the Menu Plan a few weeks ago. It's appearing again this week because it's a dish I can have on the table in under 30 minutes. Also, it helps that Stephen and I love roasted broccoli and would probably eat it with every meal if we absolutely had to.

Tuesday: Creamy Parmesan Risotto with Roasted Shrimp and Peas

This sounds like a fancy schmancy meal that has no place on the Menu Plan when deadlines are involved, but it really does come together in no time.

Wednesday: Stephen's Choice

Thursday: Shepherd's Pie

Friday: Pizza with Italian Sausage, Broccoli Rabe, and Caramelized Onions

Saturday: Leftovers / Take-Out
