Sharing our Menu Plan for March 23 - March 29, 2014


I spent a good part of yesterday simultaneously shooting two separate projects in my kitchen -- a sweet subject for a freelance client and a savory subject for Taste As You Go. Needless to say, by the time I was finished getting all the shots I needed, it looked as if a small bomb went off, with dirty dishes, unused props, and various plates of food sitting on every bit of counter space possible. I hated cleaning up after myself, but I think the mess was worth it since I got some shots that I really loved.

Since I'll be out of town next weekend visiting one of my girlfriends from graduate school, I'm trying to pack as much into this weekend as possible. That way I can enjoy my time with her without worrying about the list of things I left undone at home.

Of course, this means this week's Menu Plan isn't as full as it usually is. Stephen's going to need to take care of himself while I'm gone. ;-)

Menu Plan: March 23 - March 29, 2014

Sunday: Grilled Cheese and Tomato Soup

Since Stephen's going to be another quick business trip, I only have to worry about feeding myself tonight. And, since I have two articles due this week for freelance clients, I don't want to go all crazy in the kitchen just for myself. It's been a while since I've had grilled cheese for dinner (though, I had it for lunch this past Friday), so I'm looking forward to it.

Though, with that said, don't be surprised if you see me talking on Facebook about how I ate a plateful of waffle fries instead.

Monday: "Big Salad" with Chopped Romaine Lettuce, Tomatoes, Cucumbers, Carrots, Avocado, and Hard-Boiled Egg

The arrival of spring has me craving lighter meals and more salads, so I'm going to listen to my body and make a "Big Salad" for dinner on Monday night. I typically like to throw in some grilled chicken into these salads, but I think I'll keep it meatless this time. Especially since I have chicken planned for later in the week.

Tuesday: Creamy Parmesan Pasta with Peas and Bacon

Yes, I know I just got finished telling you about my need for lighter meals. I put this dish on the Menu Plan because I have some bacon to use up in the refrigerator.

There's a reason for everything. ;-)

Wednesday: Stephen's Choice

Thursday: Herb-Roasted Chicken Breast with Garlic, Potatoes, and Carrots from 125 Best Casseroles and One-Pot Meals

Friday - Saturday: Visiting Brandi in Columbus -- I can't wait!!!
