Sharing our Menu Plan for June 8 - June 14, 2014

After a much-needed break from menu-planning, I'm back today with this week's Menu Plan. Because of my schedule last week (a weekend work event leading directly into a last-minute trip to Connecticut), it didn't make much sense for me to go through the motions of planning meals. Especially since Stephen was also on the road.
But our respective calendars are clearing out and our lives are returning to normal, so it's back to business this week. Truth be told, I'm relieved to be settling back into our usual routine. Operating without a plan and relying on convenience food has taken its toll. I've already noticed a few extra pounds that weren't there a couple of weeks ago.
This week, I really wanted to focus on healthier and lighter meals wherever possible. Hopefully, this will lead to the creation of some tasty salads and salad dressings that I can share with all of you here.
Without further ado, here's our Menu Plan for the week!

Monday: Fresh Mozzarella, Tomato, and Avocado Sandwich on Toasted Baguette
Tuesday: Shrimp and Avocado Summer Rolls from The Kitchn
Wednesday: Stephen's Choice
Thursday: Asian Quinoa Salad from Two Peas & Their Pod
Friday: Happy Birthday, Stephen!
