Sharing our Menu Plan for July 27 - August 2, 2014
Over brunch this morning, Stephen and I admitted to each other that we haven't exactly been making the best food choices as of late. (See here and here and here.) I don't know what caused us to slip, but we're both going to try and make better choices moving forward. If not for the sake of our bodies, then for the sake of our wallets!
This means meals on the lighter side... Meals that call for more vegetables and less meat. So, I think that I've come up with a decent menu plan for the week that not only fits our dietary needs but also our grocery budget.

Menu Plan: July 27 - August 2, 2014
Monday: Panko-Crusted Salmon with Buttered Egg Noodles and Sauteed Broccoli
Tuesday: Pasta with Sauteed Broccoli, Garlic, and Olive Oil
Wednesday: Stephen's Choice
Thursday: Big Salad Night
Generally, our "Big Salad Nights" call for chopped romaine, tomatoes, cucumbers, shredded carrots, and diced avocado. I'm leaving the salad components up for grabs since I'm planning on going to the farmers market that morning.
Friday: Pizza with Sauteed Mushrooms and Homemade Ricotta
For all the times I use ricotta in our meals, it's about time I started making it at home rather than buying it in the market. This is the first time I'll be attempting homemade ricotta, so wish me luck!
Saturday: Golden Gazpacho with Avocado from Food & Wine Magazine
