Frying Homemade Falafel

Here it is... Sunday afternoon, and the holiday weekend is winding down. I hope those celebrating Independence Day had a lovely (and safe) time with friends and loved ones. Stephen and I were able to spend time with family while taking in the traditional Fourth of July parade before scooting back up to the Lehigh Valley for the fireworks show. We spent the majority of Saturday running errands, researching ideas for some home improvement projects we've been planning, and redecorating the foyer of our house. Then I followed up all of that with some time in the kitchen experimenting with homemade falafel.

Because of all that activity, we've managed to keep today relatively low-key -- a leisurely breakfast downtown and plans to get together with friends for dinner later on. This means, I get the night off from cooking... which I'll gratefully accept!

As for the rest of the week, I'm going to take advantage of some of the food stocked in our freezer so I don't have to make everything from scratch. It's there, so I may as well use it, right?

Menu Plan: July 6 - July 12, 2014

Sunday: Dinner with Friends

Monday: Tuna Melt Sandwiches

Tuesday: Healthy Asian Chicken Salad from Chez Us

To make things a little easier on myself, I'm going to buy a rotisserie chicken from the market rather than spend time poaching chicken as the recipe instructs. Whether doing that takes the "healthy" part of the salad out of the equation is up for debate. ;-)

Wednesday: Stephen's Choice

Thursday: Spaghetti and Basic Baked Meatballs

I have a batch of these meatballs in the freezer, so this meal will come together in no time at all.

Friday: Pizza with Fresh Mozzarella, Ricotta, Tomatoes, and Basil

Saturday: Garlicky Grilled Shrimp (from Food & Wine Magazine), Sliced Avocado, and White Rice
