Looking for dinner inspiration? Here's what I've planned for dinner at our house this week!
I've taken the allowable over-the-counter cold medication. I took a personal day from work to rest. I forced myself to sleep as much as possible -- during the day and at night -- with a toddler in the house. But no dice.
I'm still sick.
But I'm not prepared to stop everything else so I can recuperate. I'm worried about how being sick is going to affect my ability to stay on top of my responsibilities at work. Stephen is now in his busy season at work... and I'm worried about how I'm going to survive another long weekend of solo parenting. I'm worried that this cold will never go away and I'll be sick until this baby is born in three months.
But one thing I'm not worried about right now is getting in the kitchen to cook dinner. Stephen is preparing one of his specialties for dinner tonight. Plus he's making tomorrow night's dinner. All while entertaining Caroline and the dog.
Happy Mother's Day to me!
Now... let's see if I can convince him that having him do the laundry would make this day even more perfect. ;-)

Panko-Crusted Salmon with Rice Pilaf and Steamed Broccoli
I'm actually guessing that this is what Stephen's cooking tonight... The salmon is definite and will be accompanied by "some kind of rice" and broccoli. I'm not allowed in the kitchen until dinner is ready to serve, so I guess it's all a surprise. :)
