What's for Dinner: August 30 - September 5

Last week, focusing time and energy on home projects left me exhausted. This week, it was mental and emotional exhaustion that did me in.

I spent most of the day yesterday in a fog, desperate for my bed. Even though the kids and I spent the morning baking cupcakes, I had a hard time engaging with them. I felt guilty about it, too. It's not their fault there's a pandemic or that their parents are running on fumes.

We're doing our best under the circumstances. I know this. But they're young, and they don't understand what it means to be spread too thin. With no end in sight.

Because I can't be the only one who feels that there must be a better way... Thank goodness I have this website to help take my mind off the thoughts and worries rattling around in my head. And, for the first time in a long time, I'm not rushing at the last minute to pull together a menu plan. If you're curious, here's what I've planned for dinner this week.

  • Sunday: Spaghetti and Basic Baked Meatballs with Marinara Sauce and Garden Salad

  • Monday: Grilled Salmon with Rice and Grilled Zucchini

  • Tuesday: Ground Turkey Taco Night

  • Wednesday: Stephen's Choice (it's back!)

  • ThursdayEasy Beef and Broccoli with Rice

  • Friday: Pizza with Mushrooms and Caramelized Onions

  • Saturday: Leftovers / Take-Out
