What's for Dinner: October 2 - October 8
In my typical fashion, I'm starting this blog post later than I wanted to tonight.
I intended to write this post yesterday. But I had to shuffle everything around to fit in a last-minute doctor's appointment. Because of an incident that occurred on Friday morning—I got bitten by a dog 🤦🏽♀️—I needed to get a tetanus booster.
By the early afternoon, I was completely wiped out and gave myself more time to write the post. And since I devoted a good part of today to the birthday party of one of my daughter's friends... writing got pushed back.
So here we are.

A Week of Dinners: October 2 - October 8
- Sunday: Slow Cooker Broccoli Beef with White Rice
- Monday: Stephen's Choice / Crockpot Beef Stew
It's two beef dishes in a row, but it's getting cooler now and we're all about the comfort food! - Tuesday: Linguine with Shrimp Scampi and Simple Green Salad with Balsamic Vinaigrette
- Wednesday: Leftovers
- Thursday: Spicy Sesame Noodles with Diced Cucumber
- Friday: Mommy-Son Dinner Out / Take Out / Frozen Pizza Movie Night
My husband's out of town again and my daughter will be going to her first sleepover at a friend's house. I was toying with the idea of taking my son out to a special dinner since it'll be just the two of us.
But he's always tired at the end of the school week, so we'll play it by ear. - Saturday: Breakfast for Dinner: Fluffy Pancakes with Sausage

- Reheat Leftovers

- Thursday, October 6
- Make Spicy Sesame Noodles
- Friday, October 7
- Enjoy Mommy-Son Dinner Out or Pick up Take-Out or Make Frozen Pizza 😊

- Make Pancakes and Sausage
