A Month of Dinners: Menu Plan for June

In an attempt to make my life a little easier, I'm planning all of our dinners for June at once.

When I share our monthly menu plans, I like to do so on the last day of the month (i.e. sharing the menu plan for May on April 30). That way, it feels like I'm slightly ahead of the game. But late last night, while weeding through emails, I realized I hadn't written up the menu plan for June yet.

I considered giving myself a pass this time. Especially since it's been a little tough around here lately. Though, I knew that delaying the menu plan post, even by just one day, would throw me off my game... And it would open the door to more excuses.

So I set a timer and gave myself the challenge to Get. It. Done.

Menu Plan for June

Week 1: June 1 - June 4

Wednesday: Stephen's Choice
Thursday: Caprese Salad with Heirloom Tomatoes, Fresh Mozzarella, and Basil with Toasted Baguette Slices
Friday: Pizza with Mushroom, Bacon, and Caramelized Onions
Saturday: Bacon, Lettuce, Avocado, and Tomato Sandwiches

Week 2: June 5 - June 11

SundayOrange-Ginger Chicken (from Our Best Bites) with Brown Rice and Steamed Green Beans
MondaySpicy Sesame Noodles
Tuesday: Leftovers
Wednesday: Penne Arrabiata (from The Quick Six Fix)
Thursday: "Big Salad" with Chopped Romaine Lettuce, Tomatoes, Cucumbers, Carrots, Bell Peppers, and Hard-Boiled Egg
Friday: Margherita Pizza
Saturday: Food Truck Border Brawl (WIN FREE TICKETS HERE!)

Week 3: June 12 - June 18

Sunday: Chicken Tortilla Soup (from Lose Weight by Eating)
MondayBroiled Chipotle Salmon (from Always Order Dessert) with Wilted Garlic Spinach and Buttered Egg Noodles
Tuesday: Skinny Broccoli Alfredo (adapted from Lose Weight by Eating)
Wednesday: Take-Out
ThursdayLittle Mushroom Pinwheels (from Food52)
Friday: Flatbread Pizza with Caramelized Onions, Mushrooms, and Fontina Cheese (updated version of this recipe)
Saturday: Leftovers

Week 4: June 19 - June 25

Sunday: Tomato, Fresh Mozzarella, and Avocado on Baguette with Olive Oil and Sea Salt
Monday: Chowdered Scallops (from The Quick Six Fix)
TuesdayThai Chicken Salad (from Cookin' Canuck)
Wednesday: Stephen's Choice
Thursday: Penne with Garlic and Olive Oil and Roasted Broccoli
Friday: Barbecue Chicken Pizza (updated version of this recipe)
Saturday: Date Night

Week 5: June 26 - June 30

Sunday: "Big Salad" with Chopped Romaine Lettuce, Tomatoes, Cucumbers, Carrots, Bell Peppers, and Hard-Boiled Egg
MondaySteamed Mussels with Wine, Garlic, and Parsley (from Fine Cooking) and Crusty Garlic Bread
Tuesday: Ground Beef Hard Tacos with Homemade Taco Seasoning
Wednesday: Stephen's Choice
ThursdayBreaded Chicken Cutlets with Deconstructed Guacamole (from Skinnytaste)
