What's for Dinner: May 24 - May 30

Looking for dinner inspiration? Here's what I've planned for dinner at our house this week!

When I woke up this morning, I had a very short to-do list. Our 2yo has shown a renewed interest in potty training, so I've devoted a good amount of my time this weekend to that. I've dedicated another chunk of my time to our 5yo, who's feeling overshadowed.

So, really... I only wanted to tackle two things today -- make another set of face masks for the kids and write this blog post. I finished the masks but have had to push off this post until now. I wish I were able to carve out time to blog earlier in the day, but such is the life of a mom, right?

I have a bit of gas left in the tank, so let's get to it. Keep reading to see what I've planned for dinner at our house this week!

But first...

Notes About Last Week

  • I had originally intended to make my recipe for Falafel on Sunday, but I only had canned chickpeas in the pantry rather than dried. So I used this recipe instead. So good!

  • For Monday's Linguine with Shrimp Scampi, I used a full pound of spaghetti rather than 3/4 pound of linguine called for in the recipe. Honestly, because it didn't make sense to put 1/4 pound of pasta back in the pantry. 

  • Tuesday night's Easy Cashew Chicken Stir Fry helped use up ingredients we had on hand. I used chicken breast tenderloins rather than chicken thighs and had to fish cashews out of a large container of roasted mixed nuts to make it work. Unfortunately, the dish fell flat for us. If I make it again, I'll probably try adding sliced celery for some extra crunch and texture.

  • I made the Peasant Bread for Saturday''s dinner, but I used it for egg-and-cheese sandwiches instead. And since I didn't want to go digging for ramps (again), Stephen made some tater tots while I made the sandwiches. Decadent but delicious.
