What's for Dinner: November 8 - November 14

The last time I sat down at my computer to write a blog post, I was a bundle of nerves. Election officials were still counting ballots and it was too close to declare a winner.
But what a difference 48 hours can make.
We were out enjoying some family time when we heard the election had been called. For the first time in four years, I felt like I could breathe again. As the day continued, I felt a renewed sense of hope for the future.
I am so grateful to everyone who voted on the side of decency... to everyone who voted that character matters. The election may be over, but the work has just begun and we can finally start to heal from the trauma that we've endured.
Maybe it'll be easier to focus on the things we need to do in our everyday lives now. Like making dinner... Speaking of which, here's what I've planned for dinner at our house this week. Stay safe and be well, everyone!
A Week of Dinners: November 8 - November 14
- Sunday: Spaghetti and Basic Baked Meatballs with Marinara Sauce
- Monday: Cheddar Pierogies with Caramelized Onions and Grilled Kielbasa
- Tuesday: Monterey Chicken Skillet
- Wednesday: Leftovers
- Thursday: Breakfast for Dinner: Fluffy Pancakes and Maple Syrup
- Friday: Cheesy Mushroom & Pancetta Pizza
- Saturday: Slow Cooker Pot Roast with Mashed Potatoes
