What's for Dinner: January 17 - January 23

It's here. The final day of our sweet girl's Winter Break.

She's been home for a month and we're all ready for her to go back to school 🤣. Given her recent behavior, I've tried to focus on the intentional time I've devoted to her over the past week. I realized I was too caught up in my own world 😕 and on the things I had to do to keep things from spinning out of control. I failed to appreciate how so very important it was for me to stop and actively listen to what she was telling me... when she was telling me.

Shifting my focus has made such a huge difference... and being more intentional has helped her outbursts. And, naturally, tackling those behavioral issues alleviated the pressure I was feeling.

This bumpy patch was a not-so-gentle nudge to be more mindful... with both of the kids. That it's okay to press pause on the to-do lists... and it's okay if the only thing that gets crossed off the list is "make a blanket fort in the living room".

It just goes to show you that grown-ups can learn so, so much from the kids. 💗

So... Before I tackle that return-to-school to-do list, here's our menu plan for the week!

A Week of Dinners: January 17 - January 23

  • Sunday: Ground Beef Burgers with French Fries

    I created this week's menu plan last week. We got our 5yo's school lunch menu for the week earlier today. Guess what they're having for lunch tomorrow... 🤦🏽

  • MondayPasta with Roasted Broccoli, Garlic, and Oil 

    We have some leftover broccoli from last Friday's Pizza Night that I can add to the mix. No waste!

  • TuesdayBeef, Tomato, and Acini di Pepe Soup 

    One of the members of the What's for Dinner? Facebook Group recommended this soup recipe. She mentioned the soup is in regular rotation at their house... I can't wait to try it out!

  • Wednesday: Leftovers

  • Thursday: Three Bean Turkey Chili (adapted) made with Homemade Chili Seasoning and served with Honey Cornbread

    Homemade Chili Seasoning | Taste As You Go

    I have a work meeting on Thursday evening, so I'll probably make the chili on Wednesday night. Then, while the chili is reheating, I'll bake the cornbread to be able to serve it warm out of the oven. Plus... giving the chili a day to hang out in the refrigerator will make it taste 💣 on Thursday night.

  • Friday: Margherita Pizza

  • SaturdayCreamy Parmesan Risotto with Roasted Shrimp and Peas 

    You all know I've been trying to update older posts with new photos. This risotto recipe is the next one I hope to update. Planning updates this way work well last week... I hope it works out again this time! 🤞🏽
