Stovetop Turkey Chili Mac
It's a little embarrassing to admit this, but I haven't shared a new recipe here since July. I had hoped to share my simple recipe for Stovetop Turkey Chili Mac back in the fall... but I didn't have the kind of time I needed to write the kind of post I wanted to write.
It was taking a lot of my creative energy to stay on top of our weekly menu plans. And my other responsibilities and commitments were pulling me in opposing directions... all away from my computer. Then the holidays arrived... and now here we are, already halfway through the first week of the new year.
(In a strange twist of irony, I wrote about similar blogging roadblocks in that last recipe post.)
While I'll be sharing my focus word and goals for the year in a post soon, I will say that some of my goals center on this blog. I want to devote more time to this space. I spent much of last year cleaning things up behind the scenes. That work is still ongoing -- it never ends -- but I'm going to make more of an effort to create brand new content.
You know, so you might actually see new recipes sooner than every six months! 😂
I'm going to get things going by sharing my recipe for Stovetop Turkey Chili Mac.

As much as I love testing my cooking chops by making recipes with steps in the double-digits... I don't have a lot of time for that these days. So simple, one-pot recipes that come together in 30 minutes* are pure gold in my book.
*This is 30 minutes of cooking time. This doesn't include prep time... or time devoted to interruptions by the children who've decided to play in the kitchen at your feet.
In all seriousness, I love this recipe for a weeknight meal. You can leave the ingredients simmering on the stove and walk away to do other things. Like helping with homework... or folding a load of laundry... or just sitting and catching your breath for a minute.
But only for a minute. Because you know the timer is going to go off as soon as you get comfortable.
