What's for Dinner: May 3 - May 9

Finally.

A full weekend of nice weather.

The whole family has been spending time outside soaking up as much sunshine as possible. It felt oddly satisfying slathering the kids with sunscreen this morning.

Right now, they're playing with their blocks on the deck while Stephen tackles some more yard work. As for me, I'm typing this post up as quickly as possible so I can get outside myself.

Notes about Last Week

  • The Baked Rice and Beans I made on Sunday did not turn out the way we hoped they would. Based on the ingredients we had in the pantry, I used one can of kidney beans and one can of cannellini beans. But what was meant to be an easy throw-it-in-the-oven-and-walk-away meal was everything but. After 90 minutes, the rice was still crunchy, so we finished the dish on the stove in our Dutch oven with an additional 2 cups of water.

  • Monday night's Bulgogi-Style Eggplant was a huge hit. We didn't have gochugaru, so I had to use regular red pepper flakes. And I had to use sugar instead of rice syrup, but the whole family loved this. I'll definitely be making this again... and will be doubling the recipe!

  • The Chicken Shawarma I made on Thursday night was "easy", but the flavor fell flat. I'm not sure what happened there... though I wonder whether marinating the chicken for a touch longer would have done anything to help the overall flavor.

  • Because I had a good amount of Greek yogurt to use up after Thursday's meal, I decided to try this pizza dough recipe on Pizza Night. No yeast required! The pizza dough was heavier than our usual dough, but we loved it. It was a nice change of pace!

  • Another hit? The Classic Pigs in a Blanket that I made for dinner last night. I sprinkled some Everything But the Bagel seasoning on the rolls before baking, and I loved the extra layer of flavor they added.

A Week of Dinners: May 3 - May 9

Sunday: Grilled Beef Burgers with Potato Salad

Since it's such a beautiful day, we thought it would be a great day to break out the grill for the first time this season. These burgers are the last of our supply in the freezer.

MondaySpicy Sesame Noodles with Diced Cucumbers

Now that we have peanut butter in the house again, I can make these simple noodles for dinner. This dish will likely diminish my supply of sesame oil, so I'll be adding that to our next Peapod order... Delivery is scheduled for next Sunday. *crosses fingers*

TuesdayChicken Piccata with Spaghetti

I was inspired by recent conversations in the What's for Dinner? Facebook Group and added Chicken Piccata to the menu plan. I don't know why I didn't make this sooner... we have all the ingredients! Though, I'll have to use chicken tenders since we don't have chicken breasts, but that should be fine. Looking forward to this meal!

Wednesday: Leftovers

Thursday: Breakfast for Dinner: Pancakes with Maple Syrup and Bacon

Stephen was able to get bacon on his last grocery store run, so I think I'll make some to go with the pancakes. We haven't had bacon in a long time, so it'll be a nice treat.

Friday: Ramp Pizza

We recently confirmed that the wooded area at the back of our lot is home to a bunch of ramps. So we're going to take advantage of this gold mine as long as possible.

SaturdayThree Bean Chili

The temperatures are supposed to dip a little next weekend, so this might be our last chili until fall. Hopefully, we'll be able to pick up some bell peppers from the store before Saturday.
