What's for Dinner: January 3 - January 9
After a much-needed week off from work, I'm headed to the office tomorrow. Though, to be honest, I'll only be there for a few hours... long enough to print some things, sign some things, and have a quick planning sesh with a colleague. Then back to the house to work-from-home for the rest of the week.
I was enjoying living my life without a long to-do list or a pressing agenda... So reentry is going to be tough. Thankfully, our menu plan for the week -- the first for 2021! -- is in place and I'm relatively okay with the state of things at home... (caught up on laundry for now!)
So, LET'S DO THIS! 💪
A Week of Dinners: January 3 - January 9
- Sunday: Spaghetti with Basic Baked Meatballs and Marinara Sauce
- Monday: Salad Night
We ate pretty decadently over the holidays, so I planned a Salad Night to help us get back on track. Typically, our salads consist of lettuce, tomatoes, cucumbers, carrots, bell peppers, and cheese. When time and grocery budget allow, I also include hard-boiled eggs for extra protein and avocado (because Mama loves it 🥑).
- Tuesday: Honey Garlic Shrimp Stir Fry with White Rice
- Wednesday: Leftovers
- Thursday: Creamy Slow Cooker Chicken with Vegetables with Simple Olive Oil Drop Biscuits
- Friday: Pizza with Brussels Sprouts and Bacon (adapted from this recipe, which calls for salami)
- Saturday: Curried Roasted Parsnip Soup with Bacon Crumbles and Peasant Bread
This soup recipe is long overdue for new photos. So... here's hoping for good lighting on Saturday! 😉
