What's for Dinner: April 24 - April 30

Wild Ramps in Cast Iron Skillet | Taste As You Go

If you look out any of our back windows right now, it's not hard to miss the patches of long green leaves. Especially since they're surrounded by an expanse of dried brown ones.

If you followed your curiosity of the back of our house and started digging... you'd discover that those patches of leaves were actually patches of ramps.

In a former life, I'd carve out time to harvest as many ramps as possible, taking advantage of our good fortune. Then I'd figure out all the different ways I could use the ramps and plan our dinners around those recipes.

But now? Those ramps just remind me of a time when I had a little more freedom in the kitchen.

I harvested ramps last spring to make a special weekend breakfast. After putting in all the effort, the kids weren't impressed. In other words, they barely touched them and then complained that they were still hungry at the end of the meal. I guess they liked helping me dig them up more than they liked eating them.

I can see the ramps out there now... tempting me. But I have to do my best to ignore their siren call. One day, I'll attempt cooking with them again so the kids can try them again. But I'll get the ramps from the farmer's market and make sure to have a backup plan if things go south again.

For now, here's our menu plan for the week. With not a ramp in sight. Keep reading if you want to see what's on deck for dinner at our house this week!

A Week of Dinners: April 24 - April 30

Fiery Pomegranate Sauce | Taste As You Go

  • Monday: Leftovers

Yes! You read that correctly. Leftover Night on a Monday!

We have so much food leftover from last week that we need to eat some of it down before I make anything new.

  • TuesdayGreen Bowl with Chicken, Citrus, and Herbs with Citrus Salad Dressing

This is a new recipe for us. But I already know the kids like most of the ingredients in the dish, so I'm hoping they don't give us too much pushback when it comes time to sit down and eat.

  • Wednesday: Leftovers

    Oh yes.

  • ThursdayPenne alla Vodka and Peas

  • Friday: Dinner Out

Our daughter is scheduled to have an after-school playdate with one of her classmates, so my husband and I are going to treat our youngest to dinner out, just the three of us.

Cross your fingers everything goes according to plan!

  • SaturdayOven-Fried Southern Hot Honey Chicken with Bread & Butter Pickles, Vinegar Coleslaw, and Sweet Potato Fries
