What's for Dinner: May 1 - May 7

Welcome to May, everyone!

Or, as it's known in our house, the Month of Mom!

Mother's Day and my birthday both fall in May... and, this year, they're within a few days of each other. How could I not encourage a celebration that lasts all month?

Although I'm looking forward to all the joy these two occasions bring, May is going to be a tough slog. Work has ramped up for both me and my husband, and his work will have him back out on the road again. 

Somehow, I have to push through my busy work schedule while also keeping things afloat at home. I foresee needing a lot more coffee in the coming weeks... so I hope there's a gift card to one of our local coffee spots among my gifts this year. 😉

At the very least, I'm looking forward to some nights off from cooking dinner. Until then, I'm still on the hook. So here's what I have planned for dinner at our house this week. 

A Week of Dinners: May 1 - May 7

  • Sunday: Pasta Salad with Tomatoes, Carrots, Cucumbers, Broccoli, and Bell Peppers with Maple-Dijon Vinaigrette 

  • MondayHoney Garlic Shrimp Stir Fry with White Rice

  • TuesdayYoko Kitchen Take-Out

    My husband offered to treat us to take-out before he went on the road. So I requested to cash in this offer this week. Knowing that I don't have to rush home from our daughter's piano lesson to get dinner on the table is such a relief.

  • Wednesday: Leftovers

  • Thursday: Ground Beef Soft Tacos with Salsa and Rosa Mexicano Guacamole 

  • Friday: Stephen's Choice

    I have a work event on Friday night, so Stephen's in charge of making sure the kids eat something for dinner.

  • Saturday: Grilled Cheddar Bratwurst and Potluck German Potato Salad
