What's for Dinner: October 16 - October 22

Thank goodness it's Sunday.
I went into the weekend with a big work event on my calendar. The event included a reception on Friday evening and a full schedule of events on Saturday.
When I got home on Saturday afternoon, my entire body hurt from all the running around I was doing. Plus, with zero energy, getting upstairs to put on comfortable clothes was a struggle.
I thought I'd spend the day relaxing and letting my body rest... but we decided to take advantage of the gorgeous weather instead. We drove up to one of our favorite towns for brunch and then packed the early afternoon with yard work.
To prep the front gardens for the colder months, we laid down six bags of mulch. Then I did a little more decorating on the front step. To give the space a bit more color, I arranged some mums around the pumpkins the kids and I got last weekend.
While time-consuming, the yard work was worth it... and the front of our house looks much better now.
Better still?
Tonight's dinner was simmering away in the slow cooker all day while we were outside... so there was no need to rush around the kitchen to get something on the table.

A Week of Dinners: October 16 - October 22
- Sunday: Slow Cooker Pot Pie Soup
- Monday: Cobb Salad with Jerk Shrimp
- Tuesday: Chicken Meatball Parmesan Grinders
- Wednesday: Stephen's Choice
- Thursday: Spicy Sesame Noodles with Diced Cucumber
This was on last week's menu plan, but I didn't wind up making it because we had so many leftovers in the refrigerator. Let's see how things go this week - Friday: Pizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella
- Saturday: Take-Out / Dinner Out
We're going to have a little bit of a celebration to mark the end of my student loan payments. 🙌 I made my LAST PAYMENT back in September and finally received the notice from my lender that my last loan has been PAID IN FULL.
Loan payments were due on the 22nd of the month, which is why we're celebrating this day.
Defrost/Prep Plan
I originally planned to do a bunch of pre-cooking and prep today, but I'm still pretty tired from my work event so I pushed some of that work until tomorrow. (The kids and I have the day off for a school holiday.)

- Wednesday, October 19
- Dice cucumber for Spicy Sesame Noodles
- Thursday, October 20
- Make Spicy Sesame Noodles with Diced Cucumber
- Defrost pizza dough for Pizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella
