What's for Dinner: October 9 - October 15

I wish I could tell you that this was our front step.

While the kids and I did go pumpkin picking this weekend, we did not create this pretty porch vignette when we got home. One day, though, I'll have my act together enough to do something this lovely.

The fact we were able to get out for some fall fun was impressive enough. Especially since my husband was out of town for work again and I was juggling all the things. 

But we met up with friends at a local farm for a hayride out to the pumpkin patch to find the perfect pumpkins. By the end of our adventure, I packed four pumpkins, a half gallon of cider, and two bags of cider donuts into the trunk.

Fall fun, indeed! 😊

Alas... it's time to get ready for the week ahead. For the first time in a long time, my husband isn't heading out on the road again. Instead, I'm the one with a jam-packed schedule and work events this coming weekend.

Because of that, I did a lot of cooking and prep today to make my weeknight cooking go a little easier. If you're curious to see what's on this week's menu plan and what I managed to do ahead of time, keep reading!

Defrost/Prep Plan

There was a time when I hated the idea of spending my Sundays in the kitchen doing anything related to meal prepping. But now that I've spent some Sundays cooking ahead of time, I do see the value in it.

Do you do the majority of your cooking on a certain day so you have an easier time with it later in the week? What are your tips and tricks?

At any rate, here's how I navigated and planned for this week's menu plan.

  • Friday, October 7
    • Defrost chicken for Slow Cooker Chicken Marsala Soup

  • Saturday, October 8
    • Make farro for Simple Salmon Bowls with Farro and Miso Dressing
    • Make seasoned rice for Make Ahead Bean and Cheese Burritos

(I did some of the work on Saturday because I thought there might be a chance I'd have to pick my husband up from the airport.) 

  • Sunday, October 9
    • Make Slow Cooker Chicken Marsala Soup 
    • Assemble Make Ahead Bean and Cheese Burritos
    • Make sauce for Gnocchi with Pomodoro Sauce

  • Monday, October 10
    • Finish making Simple Salmon Bowls with Farro and Miso Dressing
    • Create next week's menu plan
    • Order groceries
    • Create next week's Defrost/Prep Plan

  • Tuesday, October 11
    • Reheat Make Ahead Bean and Cheese Burritos

  • Wednesday, October 12
    • Enjoy dinner out or reheat leftovers

  • Thursday, October 13
    • Finish making Gnocchi with Pomodoro Sauce
    • Defrost sausage for Pizza with Spicy Italian Sausage, Spinach, and Kale

  • Friday, October 14
    • Defrost pizza dough

  • Saturday, October 15
    • Make Pizza with Spicy Italian Sausage, Spinach, and Kale
