What's for Dinner: January 8 - January 14

The house is still as I write this post. In fact, the only sound I hear, apart from the clicking of the keyboard, is the gentle snoring of our dog. While the kids sleep upstairs, he's taking his tenth nap of the day.

The past week has been tough, and it's been a less-than-ideal start to the new year. You may have seen on social media that our family is navigating an unexpected hard turn in the road. It has involved shifting priorities and schedules... and we're doing our best to take it one day at a time.

My mind has been racing to try and stay on top of everything, making sure certain things don't fall by the wayside. Because my brain can't seem to quiet down, I appreciate the silence that surrounds me right now.

While they're tedious to put together, I'm so grateful for our menu plans during weeks like these... when other pressing matters are demanding our time and attention. Since I don't have to worry about what to make for dinner night after night, I can focus on the more important things.

A Week of Dinners: January 8 - January 14

  • SundayChicken and Broccoli with Steamed Rice

  • Monday: Cheese Tortellini with Pesto and Simple Green Salad

  • Tuesday: Taco Dippers and Cilantro Lime Rice

    This isn't what I originally planned to make. I wanted to make these Taco Zucchini Boats, but the zucchini at the store weren't great. Since it's just the kids and me for dinner on Tuesday night, I thought it would be fun to make the taco meat and serve it with the toppings and tortilla chips.

    (Making those changes makes sense since we have the tortilla chips in the pantry. Shifting to traditional tacos would have meant another trip to the store.)

  • Wednesday: Leftovers

  • Thursday: Stephen's Choice

  • Friday: Pizza with Bacon, Spinach, and Caramelized Onions

  • SaturdayLoaded Baked Potato and Cauliflower Soup with Peasant Bread

With so much to think about this week, I'm not going to do too much cooking ahead of time. I might try to make Tuesday's Cilantro Lime Rice tomorrow night, but I'm not making any promises!
