A Month of Dinners: Menu Plan for August

In an attempt to make my life a little easier, I'm planning all of our dinners for August at once.

Wow, do I miss you guys.

When I shared the news that I'd be going back to work, I didn't think that adjusting to our "new normal" would be so tough. I thought I'd be able to balance everything -- working, parenting, socializing, blogging... But I was so, so wrong.

Working? Yes.

Parenting? Hanging in there.

Socializing and blogging? Still haven't figured out how to fit those things in without running myself ragged.

But I'm getting there. And this blog post is evidence of that.

Last month's menu plan wound up saving us during my initial transition to the life of a working mom. So it just made sense to keep up with planning our dinners a month at a time.

Menu Plan for August

Week 1: August 1 - August 6


Monday: Mexican Stuffed Peppers (from Claire's Corner Copia Cookbook)
TuesdayMonterrey Chicken Skillet (from Budget Bytes)
Wednesday: Stephen's Choice
Thursday: Leftovers
Friday: Pizza with Broccoli and Caramelized Onions
Saturday: BLT Sandwiches and Mom's Potato Salad

Week 2: August 7 - August 13

MondayVeggie Lasagna Zucchini Boats (from Skinnytaste)
Tuesday: Leftovers
Wednesday: Stephen's Choice
Thursday: Ground Beef Taco Night with Homemade Taco Seasoning
Friday: Pizza with Mushrooms and Ricotta
SaturdaySlow-Cooked Smoky Chicken and Pinto Beans with Rice and Tortillas

Week 3: August 14 - August 20


SundaySlow Cooker Broccoli Beef (from Creme de la Crumb) and Brown Rice
MondayPeach-Basil Caprese Salad (from Our Best Bites)
Tuesday: Leftovers
Wednesday: Stephen's Choice
ThursdaySpicy Sesame Noodles
Friday: Barbecue Chicken Pizza (adapted from this version)
Saturday: Spaghetti and Basic Baked Meatballs with Marinara Sauce

Week 4: August 21 - August 27


SundayRoasted Pork Tenderloin (from Natasha's Kitchen), Parsleyed New Potatoes, and Roasted Apples (from Cooking in Stilettos)
MondayChile Baked Salmon with Lime Butter (from Willow Bird Baking), Wild Rice, and Steamed Broccoli
