What's for Dinner: August 16 - August 22

Looking for dinner inspiration? Here's what I've planned for dinner at our house this week!

It's the middle of August and things are ramping up again. I've been trying to stay ahead of everything we need to do before our 5yo starts kindergarten.

We've been working out way through her summer math workbook and reading a lot of books. Plus we've been practicing wearing our masks and I've been filling out tons of paperwork. We have still have some supplies to pick up and I want to get her a few more dress code-appropriate outfits. But all in all, we're in a solid position.

(I think.)

Even so, the general state of the world has me feeling anxious and overwhelmed much of the time. Tackling to-do lists has never been more important to me. Because I have some level of control over the items on those lists. This is why we've thrown a lot of energy at the home projects that have been on our list since we moved in.

Does anyone else feel this way right now? How are you handling it?

A Week of Dinners: August 16 - August 22

  • Sunday: Creamy Beef and Shells 

  • Monday: Weeknight Orzo Paella

  • Tuesday: Take-Out

    Tuesday is our eighth wedding anniversary, so we're going to treat ourselves to take-out. Cuisine still TBD. (If you want to relive some memories with us, then check out the post I wrote about our brunch wedding reception.)

  • Wednesday: Leftovers

  • Thursday: Mongolian Meatball Ramen 

  • Friday: Spinach and Ricotta Calzones 

    Due to timing and lack of motivation, we had pizza for dinner twice last week. I didn't have it in me to plan a regular Pizza Night this week.

  • Saturday: Grilled Cheeseburgers with Caramelized Onions and Grilled Corn on the Cob

    The corn is still pretty delicious in Connecticut, so I'm hoping to get one (or two) more meals in that allow us to take advantage of the local bounty. Plus having corn for dinner lets us stop by our favorite farmer's market.
