I've been dragging my feet on writing this post. Mostly because I don't want to admit that the weekend is almost over. Especially since I had such a nice long weekend.

Before it gets too late and I give up on writing completely... here's what I've planned for dinner at our house this week!

A Week of Dinners: October 25 - October 31

  • Sunday: Spinach and Beef Cannelloni

  • Monday: Creamy Parmesan Risotto with Roasted Shrimp and Peas

  • Tuesday: Instant Pot Chicken Tinga with Steamed Rice

  • Wednesday: Leftovers

  • Thursday: Penne with Spicy Italian Sausage, Broccoli Rabe, and Caramelized Onions

  • Friday: Caramelized Pear and Prosciutto Pizza

  • Saturday: Chicken Fingers and French Fries with Roasted Broccoli

    I decided to plan one of the kids' favorite meals for Halloween night since we won't be doing traditional trick-or-treating. They'll each have Halloween festivities at school on Friday, so we don't have to go overboard on Saturday. To make the night a little more special, Stephen and I have planned some additional fun to make up for not going around the neighborhood.
