What's for Dinner: January 24 - January 30

It's hard to believe that I was in Atlanta just over a year ago today. I had traveled to attend a work conference... something I had done numerous times before. That trip was the last time I took a flight anywhere.
Amazing...
I found myself thinking about that trip as I tried to figure out my plan of attack for today. I had a clear picture of how I wanted the day to go. I had to start in the kitchen and get tonight's dinner in the slow cooker. Then I wanted to tackle the mountain of laundry and start staging the kids' things for school tomorrow.
Then... for some reason, I imagined myself writing this blog post during daylight hours... and I thought I'd actually have time to write some thank-you notes that are way overdue.
But today did not go as planned.
Prepping dinner before coffee? I powered through it. Starting the laundry? No problem. But that's where my productivity ended. Things derailed pretty quickly once our 3yo decided it was his turn to try our patience.
After the difficulties we've been having with our oldest... I'm just grateful they didn't team up and come at us from both sides.
So... no... This post is coming to you hours after we finished eating dinner. And no... I didn't have time to do write those blasted thank-you notes. Maybe next weekend.

A Week of Dinners: January 24 - January 30
- Sunday: Slow Cooker Beef Stew (an updated version of this stew)
- Monday: Apple Orchard Salad with Maple-Dijon Vinaigrette
- Tuesday: Slow-Cooker Chicken Fajitas
- Wednesday: Leftovers
- Thursday: Roast Turkey Breast with Gravy, Apple Chestnut Stuffing, and Mashed Potatoes
It's time to tap into those Thanksgiving leftovers in our freezer. - Friday: Pizza with Mushrooms and Pepperoni
- Saturday: Stephen's Choice
Remember when my husband regularly cooked dinner once a week? It was nice, right? Ah... memories... 😉
But seriously... I'll be attending a virtual conference over the weekend, so Stephen's going to handle wrangling the kids and making sure everyone is fed.
