What's for Dinner: February 14 - February 20

Happy Valentine's Day, everyone! 💟

My day started earlier than I wanted it to. But I suppose I can overlook that little detail... since I know how excited the kids were to show me the Valentine's projects they've been working on.

For the most part, our Valentine's Day looks like any other Sunday at our house. We had homemade banana bread for breakfast... and the kids each got to enjoy a little chocolate heart for a morning dessert afterward. 

(Thus giving them plenty of time to burn off the sugar before bedtime. 🤞)

Later, they'll enjoy a fun dinner on a stick... while my husband and I will keep up our tradition of eating Indian take-out 🍛 for our Valentine's dinner. I have been looking forward to this all week!

A Week of Dinners: February 14 - February 20

  • Sunday: Indian Take-Out (for the parents) and Corn Dogs and Tater Tots (for the kids)

    I'm almost a little jealous that the kids are having corn dogs tonight! 😂 

  • Monday: 10-Minute Maple-Glazed Salmon with Steamed Rice and Roasted Broccoli

    I've been binge-watching Julia & Jacques Cooking at Home on Prime Video, and the kids were with me for their episode on salmon. Ever since then, they've been asking for salmon for dinner.

    (I'm still amazed we have kids who will willingly eat fish!)

    So I put one of our favorite salmon meals on the menu plan for the week.

  • TuesdaySweet Potato Chili with Turkey and Black Beans 

    Our son's daycare is closed for President's Day tomorrow, so I took the day off from work to spend some one-on-one time with him. (Our daughter still has school.) I'll likely make this chili ahead on Monday so all we have to do on Tuesday is reheat it!

  • Wednesday: Leftovers

  • Thursday: Penne with Spicy Italian Sausage and Broccoli Rabe

  • Friday: Spinach and Ricotta Calzones

    Taking a little breather from our usual Pizza Night. 

  • Saturday: Simple Chicken Cacciatore over Buttered Egg Noodles
