Of course, I didn't actually stop
menu planning at that point. It's tedious to plan our dinners for the week all at once... but it's also a tremendous help and I'm always grateful to have the plan when it comes time to get in the kitchen.
Plus I can order our groceries more efficiently.... plan meals around what we already have in our pantry or freezer... and avoid asking three other people what they want to eat for dinner.
So, while I wasn't sharing our weekly menu plans here... I was definitely going through the process each week to keep our family on track.
Now that
the school year has started -- finally! -- I thought it would be the perfect time to bring back the weekly menu plan posts. Plus, I'm also going to share my prep process for the week to give you a better sense of how I manage everything.

A Week of Dinners: September 11 - September 17
- Sunday: Three Bean Chili
I usually use homemade chili seasoning for this recipe, but I was out. So I picked up some seasoning packets at the grocery store this morning.
Since they were on sale, I stocked up... now I don't need to worry about making the homemade seasoning right away.
- Monday: Zucchini Parmesan and Capellini with Olive Oil
- Tuesday: Monterrey Chicken Skillet
- Wednesday: Stephen's Choice
- Thursday: Leftovers
- Friday: Frozen Pizza
- Saturday: Fish Sticks with French Fries and Peas
Defrost/Prep Plan
I'm still trying to figure out the best way to explain my process, but the following will give you an idea of when I do what. This week is a little unusual since I have a work event and my husband leaves for another work trip.
- Friday, September 9
- Defrost beef for Three Bean Chili
- Sunday, September 11
- Make Three Bean Chili
- Assemble Zucchini Parmesan
- Remove meat from rotisserie chicken for Monterrey Chicken Skillet
- Monday, September 12
- Bake Zucchini Parmesan
- Make Capellini
- Create next week's Menu Plan
- Order groceries
- Create next week's Defrost/Prep Plan
- Tuesday, September 13
- Make Monterrey Chicken Skillet
- Wednesday, September 14
- Eat whatever Stephen makes dinner
- Lead dinner clean-up
- Thursday, September 15
- Michelle has a work event
- Stephen leads Leftover Night with the kids then leaves for his work trip as soon as I get home
- Friday, September 16
- Bake Frozen Pizza (and watch a movie with the kids)
- Saturday, September 17
- Make chicken stock -- We've finally made our way through our stash in our chest freezer, so it's time to make more!
- Bake Fish Sticks and French Fries
- Steam Peas
