The kids have a long weekend and don't have school again until Wednesday. I like to schedule my time off from work when they're off... so I'm also off until Wednesday.

What better time to scoot off for some family fun than now?

Because of our little trip, this post is going to be short and sweet. If you're curious to see what we'll be having for dinner this week, then keep reading!

A Week of Dinners: February 5 - February 11

  • Sunday: Dinner Out

  • Monday: Three Cheese Tortellini with Marinara Sauce

  • TuesdayApple Orchard Salad with Maple-Dijon Vinaigrette

Because we'll likely be making questionable food choices on our trip, I put this salad on our menu plan in hopes of righting that ship. It's a favorite in our family, so I don't doubt it'll go over well with everyone.

  • WednesdayInstant Pot Kielbasa, Mushroom, and Potato Soup and Toasted Baguette Slices

This will be the perfect soup to make as we adjust back to our regular routine.

  • Thursday: Stephen's Choice

  • FridaySpinach and Ricotta Calzones with Pizza Sauce

  • Saturday: Take Out / Dinner Out

Because we're hosting an early birthday party for our oldest on Saturday, I'm giving myself the night off from cooking. It's actually a joint birthday party with three of her classmates (who all have February birthdays)... so wish us luck!
