What's for Dinner: December 22 - December 28
Looking for dinner inspiration? Here's what I've planned for dinner at our house this week!
Christmas week is upon us. I have my list of last-minute to-dos to take care of before the big day, so I'm grateful that I have the full week off from work. I'll have time to prepare and time to recover!
One of the things I'm really looking forward to, though, is spending some time with the kids. It seems as if they're both growing by leaps and bounds lately... Our sweet girl asks question after question to feed her curiosity. And our sweet boy is doing everything he can to keep up with his big sister, including chatting non-stop.
Plus, I'm doing everything I can to keep my emotions in check. The holidays are always a rough time of year for me... Some of the most important people in my life passed away in the weeks between Thanksgiving and New Year's. And there are days when it's hard not letting the sadness in my heart overtake the happiness I want the kids to feel.
As much as I want to take a break from menu planning, sticking to a routine helps distract me from that sadness. So here it is... Keep reading to see what I've planned for dinner at our house this week, including our plan for Christmas.

Sunday: Instant Pot Chicken Tortilla Soup
Monday: Creamy Parmesan Risotto with Peas (adapted from this recipe)
Tuesday: Instant Pot Minestrone Soup and Peasant Bread
Wednesday: Corned Beef with Sticky Red Currant Glaze with Carrots and Mashed Potatoes
Thursday: Leftovers
Friday: Pizza with Mushrooms and Pepperoni
Saturday: Stephen's Choice
