What's for Dinner: April 18 - April 24

It's been quite a day at our house today.

Though, I'm not sure which was more newsworthy... Seeing a black bear yearling triumph over our birdfeeder... or finally finishing my spice reorganization project.

Of course, neither of those things were on my official to-do list for the day. 

So, despite feeling super accomplished because I crossed off the spice project that's been on my list forever... which led to a much-needed reorg of the whole pantry because I couldn't stop myself... I'm sitting here feeling a little behind where I should be.

To turn things around before I tackle another load of laundry, here's our menu plan for the week!

PS. Wait... wasn't I writing about laundry in last week's post, too??

A Week of Dinners: April 18 - April 24

  • SundaySlow Cooker Jambalaya 

    We really enjoyed this!

    I used chicken breast instead of thighs since that's what I had in the freezer, and the chicken really helped to stretch the meal. My one note -- allow for extra time for the rice to cook thoroughly. The rice I used definitely needed longer.

    Thankfully, the family didn't care that some of the rice was still a little crunchy. ðŸ˜¬

  • MondayApple Orchard Salad with Maple-Dijon Vinaigrette

    I'll be using honey almond granola since I'm allergic to cranberries. But I've made two versions of this before so the rest of the family could enjoy the salad as originally designed.

  • TuesdaySlow Cooker White Chicken Chili

  • Wednesday: Leftover Night

  • ThursdayCacio e Pepe and Easy Green Salad with Maple-Dijon Vinaigrette 

    Our son actually cheered when he heard we'd be having our favorite salad dressing twice this week. ðŸ˜‚

  • Friday: Pizza with Italian Sausage, Caramelized Onions, and Broccoli Rabe

  • Saturday: Spaghetti and Basic Baked Meatballs and Marinara Sauce
