What's for Dinner: April 25 - May 1

Today was a hard one for me.
For reasons I still can't identify, everything frustrated me. I found myself losing my temper a lot, and all my usual calm-down techniques were unsuccessful. The more I had to try and reset, the more frustrated I became.
Needless to say, it wasn't a pretty situation. At one point, I actually asked the kids if they were misbehaving on purpose to see how far they could push me. 😔 But, of course, they weren't.
They were being kids. Kids stuck inside on a rainy day, who wanted their parents to entertain them. Kids who didn't understand that their parents needed to get things done to get ready for the week ahead.
I tried to make sure my frustration didn't escalate. I was quick to apologize and to identify my feelings for the kids so they could try and empathize. I also made sure to ask for their forgiveness... but also made sure to explain that it was okay if they didn't want to forgive me right away.
By the time the kids went to bed, they both understood that today was an off day for me. I let them know I was grateful for their love ❤️ and that I would try my best to have a better day tomorrow... with more smiles and hugs than frustrated faces.
For now, I'm going to plow through the remaining items on my to-do list so I can get into bed with my current read. While I tackle those items... why don't you check out our menu plan for the week?

- Sunday: Spicy Chicken Milanese with Tomato Salad and Parmesan
- Monday: Big Salad Night with Romaine Lettuce, Tomatoes, Cucumbers, Carrots, Bell Peppers, Avocado and Hard-Boiled Eggs served with Maple-Dijon Vinaigrette
- Tuesday: Ground Turkey Taco Night with Homemade Taco Seasoning
- Wednesday: Leftovers
- Thursday: Creamy Parmesan Pasta with Peas and Bacon
- Friday: Barbecue Chicken Pizza
- Saturday: Healthier Tater Tot Casserole
