What's for Dinner: February 19 - February 25

Ever have one of those weekends that has you going non-stop? Even when your actual schedule is pretty light?
It was one of those weekends for me.
I ran a bunch of errands on Saturday and then met up with my sister for brunch, just the two of us. Then I packed in some projects around the house... and a whole lot of cooking.
(I made tried this recipe for dinner on Saturday... made a variation of these muffins for breakfast this morning... made a batch of homemade vegetable broth using scraps... and then this recipe for tonight's dinner.)
Oh! And I created some fun content for a new brand partner!
Now, with absolutely no surprise, I'm racing toward the start of the work week in a bit of a frenzy. To keep up with everything I have coming up, I'm going to need as much rest as possible.

A Week of Dinners: February 19 - February 25
- Sunday: Healthier Tater Tot Casserole
- Monday: Vegan Sun-Dried Tomato, Basil and Balsamic Bucatini
- Tuesday: Shrove Tuesday / Church Pancake Dinner

- Thursday: Stephen's Choice
- Friday: Skillet Pizza
- Saturday: Spaghetti and Basic Baked Meatballs with Marinara Sauce
