What's for Dinner: November 15 - November 21
Under normal circumstances, making a plan is helpful to me. If I'm busy, my to-do list helps me focus on the important things first. If I'm working through a project with a lot of steps, a plan helps me stay on track. And, as a mom, if I'm trying to manage calendars and more than one schedule... a plan helps me make sure nothing falls through the cracks.
Under normal circumstances, following my plan makes me feel productive... on top of it. But, last week, my plans and to-do lists fell apart. A member of our daughter's school community tested positive for COVID-19... and our family pivoted to remote learning while the school conducted contact tracing.
Thankfully, on-campus learning resumes tomorrow. Then we have just one more week of classes before Thanksgiving Recess. We're all relieved to have some time off so we can reset before the final weeks before the longer Winter Recess.
To get me in the proper mindset for the week, I started making tonight's dinner this morning. The next step is for me to get the vegetables in the oven for roasting. After that, things will come together pretty quickly.

A Week of Dinners: November 15 - November 21
- Sunday: Roasted Butternut Squash Soup with Peasant Bread
- Monday: 10-Minute Maple-Glazed Salmon with Steamed Rice and Roasted Broccoli
Our kids love salmon. But they love it, even more, when I prepare it this way.
- Tuesday: Mongolian Meatball Ramen
- Wednesday: Leftovers
- Thursday: Grilled Chicken with Lemon Orzo Pasta and Peas
- Friday: White Mushroom Pizza
- Saturday: Take-Out
