What's for Dinner: December 27 - January 2

It's crazy to think about this, but this is the final week of 2020. Since I'm off from work this week, I can take some time to recover from the holidays and, honestly, from this year. 

I have some small home projects I'd like to tackle... Then there are those end-of-year blog posts I want to write... And I need to set up my bullet journal for 2021. But other than those things, I'm going to just be.

One of the things that'll help me take time for myself is having Stephen cook dinner. Most of the week will be mine, but he's put himself in charge of making dinner on New Year's Eve and on New Year's Day. 🙌

  • Monday: Fish Sticks with Tater Tots and Peas

    A special request from our 5yo. 💖

  • TuesdaySlow Cooker Korean Beef Tacos 

  • Wednesday: Leftovers

  • Thursday / New Year's Eve: Sauerbraten with Potatoes 

    Stephen's using a recipe from an old church cookbook. I'm pretty excited that I don't have to cook.

  • Friday / New Year's Day: Pork and Sauerkraut

  • SaturdayPizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella

    We pushed Pizza Night to Saturday so we could enjoy the traditional pork and sauerkraut on New Year's Day. It seemed fitting to me to plan a family favorite for our first Pizza Night of 2021.
