What's for Dinner: March 21 - March 27

Yesterday, the kids and I did a we-made-it-through-the-winter dance to celebrate. And, if I'm being honest, it was a lot of fun being silly and shaking off those winter doldrums. Especially after such an emotional week.

While it was on the cooler side yesterday, it definitely felt like spring today... and we spent a good part of the day outside, soaking up the sunshine. ☀️

Of course, the warmer weather also inspired me to get a jump on our spring cleaning. And I was able to focus on some house projects that have been on my list for months. It felt great to be so productive today, and I loved the freedom I felt from unplugging.

A Week of Dinners: March 21 - March 27

  • SundayHoney Almondine Lingcod with Brown Butter with Jasmine Rice and Roasted Asparagus

    If you missed the announcement, I am partnering with Sitka Salmon Shares as a new brand affiliate. This community-supported fishery delivers responsibly and sustainably harvested wild-caught Alaska seafood from their fishermen directly to members' doorsteps. In fact, all of their fish has been individually caught and filleted by one of their fishermen-owners or trusted partner fishermen using fishing methods that minimize negative ecological impacts.

    So tonight's dinner featured lingcod, which is a fish new to our family. According to the company's website, "lingcod is a greenling, a voracious bottom-dwelling predator that’s a favorite of sport fishermen (and home cooks) in Southeast Alaska... [It has] semi-firm, lean white flesh that’s nearly as dense and meaty as halibut. Like halibut, lingcod is wonderful pan-seared, sautéed, or fried."

    I'm grateful that my affiliate box came with a recipe card for the lingcod, and it was delicious!
