What's for Dinner: April 17 - April 23

If I'm being perfectly honest right now, I didn't want to write this post tonight. I had a trying week full of rough bumps that left bruises (metaphorical, not physical)... and then I had to rally to be present for our full weekend of Easter festivities.

I'm exhausted.

I know you hear that from me a lot... but operating with an exhausted mind and body is just par for the course for moms. All I can do at this point is my best and hope for a better week ahead.

So before I make up an excuse for skipping out on this post, here's what's on deck for dinner at our house this week!

A Week of Dinners: April 17 - April 23

  • Sunday: Easter Dinner with Family

  • MondayEasy Roasted Vegetable Quesadillas with Salsa and Avocado

    I just finished roasting the vegetables for Monday night's dinner, so everything should come together really quickly tomorrow night.

  • Tuesday: Meatball Grinders with Provolone Cheese, served with Sweet Potato Fries

    I'm relying on the two batches of my Basic Baked Meatballs that are in the freezer for this meal. Tuesdays are long days for us now that our daughter has started piano lessons, so we need meals that are easy to get on the table on those nights.

  • Wednesday: Leftovers / Stephen's Choice

  • ThursdayWhite Chicken Chili 

  • FridayPizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella 

    Pizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella | Taste As You Go

  • Saturday: Penne with Italian Sausage and Broccoli Rabe and Caramelized Onions
