A Week of Dinners: August 13 - August 19

  • SundayVegetarian Skillet Chili 

  • Monday: Pasta Salad with Tomatoes, Cucumbers, Carrots, Bell Peppers, Hard-Boiled Egg, Cheese, and Broccoli

    I had the kids help me prepare the veggies for the pasta salad on Sunday afternoon. I love that they're excited about helping in the kitchen!

  • TuesdayFlank Steak Tacos with Cucumber Salsa and Mexican-Style Rice

  • Wednesday: Leftovers / Buffet Night

    A coworker recently told me that she refers to "Leftover Night" as "Buffet Night" in her house because her kids didn't like the term "leftover".

    Figured I'd give it a try in our house! Because "Buffet Night" sounds like a lot of fun!

  • Thursday: Margherita Pizza

  • Friday: 11th Wedding Anniversary / Indian Takeout

    Today is our 11th wedding anniversary, so we're going to order Indian takeout! Not the celebration we were envisioning, but with all the house stuff going on, this is the best we could do. 😉

  • Saturday: Leftovers / Buffet Night

    I have a work event today, so I'm hoping the rest of the family will eat down the leftovers in the fridge.
