What's for Dinner: May 4 - May 10 | A week of dinners on Taste As You Go

Another busy weekend is in the books.

The kids and I kicked things off by stopping by the Art Show for our local public schools to see my daughter's two pieces on display. Then we headed over to the community carnival at my work.

Saturday was full of errands and yard work, while I tried to play catch up today. Turns out, I'm feeling more overwhelmed than usual by the mental load I'm carrying, and I had a bit of a meltdown. 

Thankfully, ice cream and French fries cure most things. 

Now we're one week away from Mother's Day and my birthday. I wonder what type of surprises await me! 

Before we can get there, we have to survive this week. To help us do that, here's our menu plan!

Sunday: Hoisin-Ginger Noodles with Diced Cucumbers

Monday: Make Ahead Bean and Cheese Burritos with Rosa Mexicano's Signature Guacamole

My husband and I made a double-batch of these burritos after dinner tonight -- half for dinner this week and half to keep in the freezer for a rainy day.

Or for a night when our daughter needs a little extra food after swim practice.

Tuesday: Asian Chicken Salad with Chili Crisp Dressing 

Wednesday: Buffet Night

Thursday: Dad's Choice

Friday: White Pizza with Fresh Arugula and Prosciutto
