What's for Dinner: December 5 - December 11
It took us a little over a week, but the house is finally decorated for Christmas. (Not including the external lights... which my husband will take care of.) This year, more than ever, it feels like the decorations we've put out make sense. They make our house feel like a home... and I love how everything looks with strings of twinkle lights draped here and there.
Some of you may remember that the weeks between Thanksgiving and New Year's Eve are hard for me. In this time, my heart will endure the anniversaries of the deaths of both my grandparents and my mother.
This year has been especially hard, so I'm allowing myself to go all-in on Christmas this year. I want to make it a magical time for our family... and, if I'm being honest, I want to give myself a distraction so I don't get swallowed whole by my dark feelings.
With the decorations set, I've moved on to other things... like wrapping gifts. And, of course, I'm thinking about what Christmas cookies to bake and what to make for our Christmas dinner. The list never ends.
So I get back to my elf duties (and laundry), here's this week's menu plan. If you're curious to see what's for dinner at our house this week, then keep reading!
A Week of Dinners: December 5 - December 11
- Sunday: Stuffed Pepper Casserole
- Monday: Linguine with Shrimp Scampi
- Tuesday: Rice and Beans {with Kielbasa} and Honey Cornbread Muffins
- Wednesday: Leftovers
- Thursday: Fish Sticks, Smiley Fries, and Peas
I need an easy night in the kitchen every now and then.
Edit 12/8/21: Our schedule is a little packed on Friday now, so I made the executive decision to postpone Breakfast for Dinner. We'll be doing take-out instead.
