Since last week was so busy, I made sure we made time for some fall family fun this weekend. My main goal? Spruce up our front step and decorate it for the season.
We headed to a local garden center and spent way too much time picking out mums and an assortment of pumpkins. Then, before his swim lesson this afternoon, my son and I went shopping for a new fall wreath for the front door.
I'm so in love with the finished look. Now it's all about keeping everything looking fresh... and keeping the squirrels away from the pumpkins!
Of course, focusing so much attention on the house took time away from other things. Like getting this week's menu plan post on the blog at a reasonable hour. Alas... such is life.
Without further ado, here's what's on deck for dinner at our house this week!
Sunday: Stuffed Pepper Casserole
I was going to make this for dinner last night, but we were out late and just cobbled together a meal when we got home. So I bumped the casserole up to tonight.
This is one of our family's favorite fall salads. (Though, to be honest, I make it all year around!) Since they were on sale, I bought some dried cherries to add on top. So good!
It's been a long time since I've made this pork tenderloin recipe, and I have to admit... I'm really looking forward to it. Let's hope the kids leave enough so we have a nice variety of leftovers for Buffet Night this week!
Wednesday: Buffet Night
Ground turkey was also on sale recently, so my husband has been tasked with making a batch of my Three Bean Chili with turkey instead of beef. I have to work on Thursday night, so I made it a little easier for him by planning the meal and making sure we have all of the ingredients in the house.
Friday: Chicken Parmesan Pizza
This is an easy pizza to throw together. Use store-bought dough and jarred pizza sauce. Top with shredded mozzarella and diced breaded, pre-cooked chicken tenders. Then grated some fresh Parmesan cheese on top and bake. Ta da!
I'm trying to avoid a trip to IKEA by making this meal at home. Think it'll work?
